I first joined Balls Brothers as a Commis Waitress after leaving university and needed a ‘job’ whilst I decided on a ‘career’.

Six years later I am firmly established in my career as a Bar manager of Balls Brothers Bishopsgate, thanks to the company’s excellent development and training programs.

Taking just four years and with constant support and training at every stage, practical experience in a number of different venues, Balls Brothers have helped me to develop for a diverse and challenging career.

This management & development program allowed me to experience all aspects of management in restaurant, bar and kitchen with on-going training in customer services, health and safety, food and menu development, wine knowledge, business development and financial controls.

I first joined Balls Brothers as an Assistant Manager at Mulligan’s of Mayfair.

Since, thanks to the company’s dedication to staff development, I was given the opportunity to be involved in the setting up of a new Bar at Balls Brothers Bury Court. I was able to spend a year defining my managerial skills at the flag ship Bar and Restaurant at Balls Brothers Lime Street and, as a result, I now manage Balls Brothers Blomfield Street.

I have experienced all aspects of management training from bar, restaurant to kitchen. The training is on going from wine knowledge, menu planning, health and safety, business development.

The training of staff at all levels allows for progression within the company and it is one of the best, if not the best training programs, I have come across in the industry.

I never thought when I started with Balls Brothers in 1998 that I would still be working for them in now. I have progressed from Sous chef to Head Chef through a variety of different Bars and Restaurants, each with different challenges, and allowing me to develop new skills.

I have the freedom to design my own menus with in the modern British theme that the company offers, to tailor make the menu to the different customers in each bar.

And I have to say that working Monday to Friday is you a rare chance in hospitality, that is the joy of weekends free to enjoy a ‘normal‘ life.
